Ingredients
- 1 tbsp rapeseed oil
- 1 onion
- 3 cloves garlic
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tbsp thyme
- 3 carrots
- 2 celery stalks
- 1 red pepper
- 1 yellow pepper
- 2 tins tomatoes
- 250ml vegetable stock
- 2 courgettes
- 250g lentils
Instructions
- Heat oil in a pan, cook onions until softened
- Add garlic, spices, and vegetables
- Cook for 5 minutes
- Add tomatoes, stock, and thyme, simmer for 20-25 minutes
- Stir in lentils and serve with rice or quinoa
