Description

A healthy and comforting vegetarian casserole made with lentils, fresh vegetables, and herbs. This dish is perfect for a wholesome meal, served with rice or quinoa.

Lighter Version

Use canned lentils and pre-cut vegetables to save time.

Ingredients

  • 1 tbsp rapeseed oil
  • 1 onion
  • 3 cloves garlic
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 tbsp thyme
  • 3 carrots
  • 2 celery stalks
  • 1 red pepper
  • 1 yellow pepper
  • 2 tins tomatoes
  • 250ml vegetable stock
  • 2 courgettes
  • 250g lentils

Instructions

  1. Heat oil in a pan, cook onions until softened
  2. Add garlic, spices, and vegetables
  3. Cook for 5 minutes
  4. Add tomatoes, stock, and thyme, simmer for 20-25 minutes
  5. Stir in lentils and serve with rice or quinoa
