A healthy and flavorful Vegan Lasagna made with lentils, vegetables, and a creamy vegan béchamel sauce. Perfect for a hearty and nutritious meal.

Use pre-cooked lentils and ready-made vegan béchamel sauce to save time.

Ingredients

  • 1 cup red lentils
  • 1 carrot
  • 1 onion
  • 1 zucchini
  • 150g spinach
  • 10 lasagna sheets
  • 35g vegan butter
  • 4 tbsp flour
  • 300ml soya milk
  • 1.5 tsp mustard
  • 1 tsp vinegar

Instructions

  1. Boil vegetables and lentils for 20 minutes
  2. Blanch spinach and cook lasagna sheets
  3. Make the béchamel by combining vegan butter, flour, soya milk, mustard, and vinegar
  4. Assemble the lasagna in a dish and bake at 180°C for 25 minutes
