This Tex-Mex Chili Bowl is a quick and delicious meal featuring ground beef, black beans, and tomatoes, topped with crispy tortilla chips, lime crema, and fresh tomato salsa. Perfect for a comforting yet fresh dinner.

Lighter Version

Skip the step of making the lime crema and serve with plain sour cream. Use store-bought salsa instead of making it fresh. Reduce the garnish to save time.

Ingredients

  • 380g black beans
  • 75g tortilla chips
  • 100g tomato salsa
  • 1 garlic clove
  • Seasonings (sweet & black pepper, garlic and other)
  • 100g sour cream
  • 390g diced tomatoes
  • 200g ground beef
  • 1 spring onion
  • 1 lime
  • 50ml water
  • salt to taste
  • pepper to taste
  • 1.5 tablespoons oil

Instructions

  1. Slice the white and green parts of the spring onion separately into thin rings
  2. Quarter the lime
  3. Drain the black beans in a sieve
  4. In a large pan, heat 1 tablespoon of oil
  5. Press the garlic into the pan and sauté for 1 minute
  6. Remove and mix with sour cream and juice from 1 lime quarter
  7. Season with salt and pepper
  8. In the same pan, without adding extra oil, brown the ground beef and the white part of the spring onion for 2-3 minutes
  9. Add sweet & black pepper (+ other seasonings) and black beans, cooking for another minute
  10. Deglaze with diced tomatoes, 50 ml of water, and 1 teaspoon of sugar
  11. Simmer for 3-4 minutes, then season with salt and pepper
  12. Serve the chili in deep bowls, topped with tortilla chips, lime crema, and tomato salsa
  13. Garnish with the green part of the spring onion and serve with the remaining lime wedges
