Description

A quick and healthy mini pancake made from tapioca or a mix of tapioca and egg (Crepioca), filled with cheese, turkey slices, and veggies. Perfect for a fast, nutritious meal.

Lighter Version

If you don't have tapioca, you can use chickpea flour to make a quick flatbread. You can also skip the veggies and turkey for an even simpler version.

Ingredients

  • 2 tbsp tapioca flour or chickpea flour
  • 1 egg
  • 2 slices cheese
  • 2 slices turkey
  • Optional: veggies (spinach

Instructions

  1. In a bowl, mix 2 tbsp of tapioca flour (or chickpea flour) with 1 egg to make the crepioca
  2. Heat a non-stick pan over medium heat and pour in the mixture, cooking it like a pancake for 2-3 minutes on each side until firm
