Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 1 can black beans
  • 1 cup corn
  • 1 can diced tomatoes
  • 1 onion
  • 2 garlic cloves
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 1/2 cup shredded cheese
