Ingredients
- 1 tbsp olive oil
- 2 onions
- 1 red chili
- 1 garlic clove
- 1 tbsp caster sugar
- 800g cherry tomatoes
- 4 eggs
- 1 tbsp chopped coriander
- Feta cheese
Instructions
- Heat oil in a pan, soften onions, chili, garlic, and coriander for 5 mins
- Add tomatoes and sugar, simmer for 8-10 mins
- Create dips in the sauce, crack eggs, and cook with the lid on for 6-8 mins
- Garnish with coriander and serve
