Ingredients
- 300g digestive biscuits
- 150g butter
- 400g condensed milk
- 3 egg yolks
- 4 limes
- 300ml double cream
- 1 tbsp icing sugar

Instructions
- Crush digestive biscuits and mix with melted butter, then press into a tart tin
- Bake the base and let it cool
- Whisk egg yolks, condensed milk, lime zest, and juice, then pour into the base
- Bake for 15 minutes and chill for 3 hours
- Serve topped with whipped cream and lime zest
