Ingredients

  • 300g digestive biscuits
  • 150g butter
  • 400g condensed milk
  • 3 egg yolks
  • 4 limes
  • 300ml double cream
  • 1 tbsp icing sugar

Instructions

  1. Crush digestive biscuits and mix with melted butter, then press into a tart tin
  2. Bake the base and let it cool
  3. Whisk egg yolks, condensed milk, lime zest, and juice, then pour into the base
  4. Bake for 15 minutes and chill for 3 hours
  5. Serve topped with whipped cream and lime zest
