Description

A rich and delicious creamy pasta dish made with chicken breast, tomato sauce, and mozzarella cheese. Cooked quickly in a pressure cooker, it's a perfect hearty meal for busy days.

Lighter Version

For a lighter version, reduce the amount of heavy cream and cheese, or substitute with low-fat alternatives. You can also use pre-cooked chicken to save time.

Ingredients

  • 100g penne pasta
  • 1 clove garlic
  • 1/2 onion
  • 1/2 cup tomato sauce
  • 150g diced chicken breast
  • 1/4 cup heavy cream
  • 50g mozzarella cheese
  • water
  • salt
  • pepper
  • Optional: other seasonings (paprika
  • Italian herbs)

Instructions

  1. In a pressure cooker, sauté the garlic and onion with diced chicken until lightly browned
  2. Add your preferred seasonings
  3. Pour in the tomato sauce, penne pasta, and enough water to cover the ingredients
  4. Seal the pressure cooker and cook under pressure for 10 minutes (or less)
  5. After releasing the pressure, open the cooker and stir in the heavy cream and mozzarella cheese
  6. Adjust the salt and serve warm
