Description

A satisfying chicken rice meal with sautéed onions and carrots, perfect for a hearty and comforting lunch or dinner.

Lighter Version

Use bag rice and skip sautéing the onion and carrot for a quicker version.

Ingredients

  • 200g chicken breast
  • 1 tsp sweet pepper
  • 1 clove garlic
  • 1 tsp black pepper
  • 1 tsp soy sauce
  • Optional: 1/4 tsp cayenne pepper
  • 1/2 cup basmati rice
  • 1/2 onion
  • 1-2 carrots
  • 1 tbsp olive oil

Instructions

  1. Marinade chicken with sweet pepper, garlic, black pepper, soy sauce, and optional cayenne pepper
  2. Cook in air fryer or oven
  3. Sauté onion and grated carrot in olive oil, then add rice and water
  4. Cook for 11 minutes over medium heat with the pot covered
