Ingredients

  • 1/2 cup buckwheat flour
  • 2/3 cup flour
  • 1/2 tsp salt
  • 1 tsp yeast
  • 1 cup milk
  • 2 tbsp butter
  • 1 egg (separated)

Instructions

  1. In a bowl, whisk buckwheat flour, all-purpose flour, salt, and yeast
  2. Add warm milk and mix until smooth
  3. Let rise for 1 hour
  4. Stir in melted butter and egg yolk
  5. Fold in whisked egg white
  6. Let batter rest for 20 minutes
  7. Heat butter in a skillet, drop batter, cook for 1 minute, flip, and cook for 30 seconds more
  8. Repeat with remaining batter
