Description

A classic British dessert, Blackberry Fool is a light and creamy treat made with fresh blackberries and a mix of cream and yogurt. Served with hazelnut biscuits, this dish is both fruity and indulgent.

Lighter Version

Skip making the hazelnut biscuits and serve the fool with store-bought cookies. You can also use pre-made blackberry puree to save time.

Ingredients

  • 50g hazelnuts
  • 125g butter
  • 150g caster sugar
  • 1 lemon (zested)
  • 150g plain flour
  • 1/2 tsp baking powder
  • 600g blackberries
  • 75g sugar
  • 2 tbsp caster sugar
  • 1 tbsp lemon juice
  • 300ml double cream
  • 100ml yogurt
  • Mint leaves for garnish

Instructions

  1. For the biscuits, preheat the oven to 200C/180C (fan)/Gas 6 and line two large baking trays with baking parchment
  2. Scatter the hazelnuts over a baking tray and roast for 6-8 minutes, or until golden-brown
  3. Remove and cool
  4. In a bowl, beat butter and sugar until light and creamy
  5. Add chopped nuts, lemon zest, flour, and baking powder, and mix until a dough forms
  6. Shape into 24 balls, flatten them, and bake for 12 minutes
  7. For the fool, cook blackberries with sugar and lemon juice for 15 minutes
  8. Sieve to remove seeds
  9. Whip cream and yogurt until soft peaks form
  10. Gently fold in the blackberry purée
  11. Serve in glass bowls with biscuits
