Description

Skip the pre-baking of the crumble topping and directly bake it with the fruit filling to save time. Use store-bought crumble mix for convenience.

Ingredients

  • 120g plain flour
  • 60g caster sugar
  • 60g butter
  • 300g Braeburn apples
  • 30g butter
  • 30g demerara sugar
  • 120g blackberries
  • 1/4 tsp cinnamon
  • Ice cream for serving

Instructions

  1. Preheat oven to 190C (170C fan/gas 5)
  2. In a bowl, mix the flour and caster sugar
  3. Add butter and rub it into the flour to form a light crumb texture
  4. Spread the mixture on a baking sheet and bake for 15 minutes until lightly golden
  5. For the compote, peel, core, and dice the apples
  6. In a saucepan, melt butter and demerara sugar over medium heat until it turns to light caramel
  7. Add apples and cook for 3 minutes, then add blackberries and cinnamon, cooking for 3 more minutes
  8. Remove from heat and let sit for 2-3 minutes
  9. Spoon the fruit mixture into an ovenproof dish, top with the crumble, and bake for another 5-10 minutes
  10. Serve warm with ice cream
